Happy Easter! Well, almost. I wanted to get this recipe up prior so that you could incorporate it into your festivities tomorrow. We don't really do too much easter in our house, but we DO use it as an excuse to brunch, because who doesn't love an excuse to eat? So, with that said, let's dig in.
3 cups organic almond flour - blanched
1/2 tsp sea salt
1/2 baking soda
1/4 cup grass-fed butter or coconut oil
2 large pasture-raised eggs
1 tbsp raw honey
Preheat oven to 350. Line your baking sheet with parchment paper. In a large bowl, whisk flour, salt and baking soda together. In a separate small bowl, mix butter, eggs and honey until combined. Add wet ingredients to the dry and mix until dough forms. Evenly space balls of dough onto sheet and then with a spoon, or other flat surface, press balls down to flatten them. Bake for 15 minutes or edges are a light golden color. (to avoid bottoms burning, opt for a thicker pan).
1 cup organic heavy cream
1/2 tsp vanilla extract
2 tsp. stevia
Mix cream, vanilla and stevia into mixing bowl. Beat on high until stiff peaks begin to form.
Slice biscuits down the middle. Layer one biscuit, whipped cream, strawberries, whipped cream and then top of biscuit to recreate the picture above.
