This velvety smooth mousse will be sure to impress your Valentine this weekend, and the best part is it's full of healthy, satisfying fats like coconut and avocado to keep you from that dreaded sugar rush. Pair it with some of bubbly and your favorite berries for a tasty, after-dinner delight. 

 


Ingredients: 

1 can coconut milk - skimmed for the coconut cream on top - do not use the liquid milk portion

1/2 avocado

4 tbsp cacao powder

2 tbsp maple syrup

1/2 tsp vanilla extract

 

In a small mixing bowl, mash the avocado with a fork. Add in coconut cream and use hand beaters to mix until fluffy peaks begin to form. Mix in cacao powder, maple syrup and vanilla. Continue to beat air into the mixture until it reaches a smooth, fluffy consistency. Put in the refrigerator for 15-20 minutes and serve cold topped with berries and nuts of your choice.
