1 cup Enjoy Life chocolate chips + 2 tbsp. coconut oil for coating

1/2 cup coconut oil, firm

1/4 cup shredded coconut, unsweetened 

2 tbsp. maple syrup 

20-30 drops peppermint oil (I used Doterra) OR 1 tsp. peppermint extract 

Line a small baking sheet with parchment paper and set aside. 

In small mixing bowl, add coconut oil, shredded coconut, maple syrup and peppermint and mix well. Form small patties and place evenly on baking sheet. Freeze for 30 minutes or until hard. 

5 minutes before you remove them from freezer, make your chocolate coating. In a small saucepan, heat chocolate and 2 tbsp. of coconut oil over low/melt heat. I used a makeshift double broiler by putting 1 inch water in a skillet and then putting saucepan on top, but you can do it either way. Just stir and watch to make sure chocolate doesn't burn. 

Remove patties from freezer and use a dipping tool to evenly dip each patty and place back on baking sheet. Do this until each has been dipped and then freeze for another 10 minutes. Serve and enjoy!

*Because they are coconut oil, I don't recommend leaving them unrefrigerated. I like to put mine in little baggies and keep in the freezer for a refreshing, minty treat!
