Ingredients for Meatballs: 

1 lb. ground bison 

1 lb. ground Mild Italian Sausage 

1 egg, whisked 

1 tsp. garlic powder

1 tsp. onion powder

1/2 tsp. cayenne pepper 

1 tsp. dried oregano 

Salt and black pepper, to taste

Optional: Raw goat cheese and fresh basil 

Preheat oven to 400 and line a baking sheet with parchment paper. In a large mixing bowl, add all ingredients and begin to mix together with hands. Avoid churning the meat too much however as it will lead to tougher meatballs. Once mixed, form meatballs using a rounded 1/4 cup. Place meatballs evenly on baking sheet and bake for 15 minutes leaving the last 2 minutes for a low broil. Serve over zucchini noodles as shown. * I bought these "spiralized" like this (because I was feeling lazy!), but you can make zucchini noodles at home with a food processor attachment or by using Spaghetti Squash instead.
