Cabbage is one of those foods that has amazing health benefits, but tends to be underrated and overlooked by most people. We have long known about the gut-healing effects of cabbage juice, but research is showing that the whole plant is just as good at offering nutrients for optimal gut health as its constituents.
Cabbage has tons of anti-inflammatory nutrients and is high in Vitamin C, which both contribute to the healthy formation of new gut tissue, or lining. Digestive distress is terribly stressful to the body, so maintaining health gut structure and function is paramount to keeping the other systems of the body healthy as well.
One of my new favorite ways to get in this yummy veggie is through this creamy and tart coleslaw. The apples help to support the gallbladder and the apple cider vinegar helps stimulate digestion juices for an all-around win. Serve it as a side or eat it alone, neither one will disappoint. Enjoy!
1/2 head cabbage, thinly sliced
1 1/2 cup carrot, grated
2 medium apples, chopped (green or gala)
1 cup Primal Kitchen Mayo
1 tbsp honey
2 tbsp apple cider vinegar
Salt and black pepper, to taste
Add cabbage, carrots and apples into a large mixing bowl. In a another small bowl, mix mayo, acv and honey until combined. Pour mixture over cabbage and toss thoroughly until evenly coated. Allow to sit 2-3 hours before serving. The longer it can sit the better, so feel free to make it way ahead of time.
