So, I woke up this morning with a craving for fluffy, fluffy pancakes. I've followed a few recipes before, but always found them to be really "egg-y" or too flat and dry. I've also been incorporating tapioca starch lately into my recipes to thicken them up, and thought that maybe, just maybe, it would be the cure to my all pancake ails...Low and behold, the fluffiest, most buttery coconut pancakes I've ever tasted! I Hope you love them as much as I do  :) 



4 eggs

1 cup coconut milk or raw cows milk

1/2 coconut flour

1 tsp tapioca starch

2 tsp vanilla extract

1 tsp baking soda

1 tbsp maple syrup 

1/2 tsp pink himalayan salt 

1/4 - 1/2 cup GF Enjoy Life Chocolate Chips

Butter to grease the griddle

Begin by preheating the griddle to 325 degrees. Whisk eggs together until they blend together. Add in coconut milk, vanilla and maple syrup and mix together. In a separate bowl, mix the coconut flour, tapioca starch, baking soda and salt. Combine the wet and dry ingredients and mix until smooth. If the consistency is too thick, add a tsp of water at a time until it's a bit thinner. Add in chocolate chips and mix through. Grease the griddle with ample butter. Ladle the mixture into 2-3 inch rounds and let sit until you begin to see tiny bubbles appearing on the top of the pancake. These tend to cook a bit slower than a regular pancake, so be patient. :) Most, of all, ENJOY!
